Oat bran cookies

Tasty oat bran cookies

2 tablespoons of oatbran
2 eggs - separated
2 level tablespoons of splenda
1/2 tablespoon vanilla essence

In one bowl mix bran and yolks and other dry ingredients (I have also tried it with less vanilla essence and a tsp of cavelier sugar free nutella.. yums!)

Whisk your egg whites until they form very stiff peaks and fold into the bran mixture. If the bran mixture is not very fluid it is worth adding a small amount of the egg white to loosen the mixture first before gently folding the rest of the whites in.

fold until the egg whites are no longer in lumps, once mixed scoop onto a non stick baking sheet, really important I can imagine it sticking to baking paper - i got my sheet from the £1.20 store (Isle of mans poundland)

 12-16 minutes on 180c



soft bendy cookies which seem to taste better the next day and take on a sponge cake consistency the next day if you wrap them in foil,

Day 2

Well I havent done bad but I have had veg, carby veg at that..
I made my own bread by adapting the cookie recipe and it worked well and tasted a treat with some lurpack light, I can actually see syself making sanwiches from it!!

L: 4 slices salami, 5 swedish meatballs, rocket, and a few pine nuts may have slipped in with a little pesto dressing.
D: Leek and carrot soup with my dukan bread and half a sausage.
S: Peach 0% activia
So I am feeling a little more positive and motivated as a result of discovering these cookies/bread.. whatever it is I am feeling more like experimenting and everything feels a little fresher and more worth while I guess as opposed to robotically doing the same thing all the time. wonder how long this lasts!

Hello again

This mornings weight 71.5Kg

Okay so I have not tried very hard. Now it occurs to be I am on holiday in less than a month and best get a move on, weighed myself the other day and I was close to 73kg. So I have taken my diet seriously since friday and have a little loss as above, good good good!!

I am more motivated as a result, I have had sausage and egg with low fat mayo for brunch and have chicken legs in for dinner. I am not having veg until the weekend, wish me luck!!

start the diet on monday.. no sunday!

Okay so I now weigh 71.9kg
Not happy with this gain, I have booked to go to cyprus with dan for my birthday at the start of april and we both want to lose a few pounds. I go away on 6th april so I would really like to be 69kg by then fingers x'ed that I can get to that goal!!
Breakfast/lunch: gravadlax with a boiled duck egg
dinner: I have a mousakka in the fridge that needs to be eaten. I think it has approx 15g carb per hundred gram which is not terrible but not ideal either, I will have brocolli with that, then tomorrow there is nothing in the fridge really so a shop is in order and it will be time to start completely from fresh!

perhaps day 1 is tomorrow...?

So yesterday, not weighed myself, fearing the scales!

b: 2 sausages w no sauce

l: salami and a subway salad box with all salad except tomatoes, sw dressing (2g carb per av sandwich so hopefully wasnt too much but tastes super good)

d: chicken skewers and dan thought he would suprise me with my all time favorite olive bread so unfortunately i ended up having half a loaf, I have mentioned this was a thoughtful gesture but please think about my waistline.. hopefully i didnt make him feel too bad :-(

day 1 - determined!!

Okay,  so all better now. that was definately no 24 hour bug!

I have not weighed myself in a few days but I suspect its not good news, I haven't eaten properly, just once a day and fattening carby stuff. Feeling well again so there is no excuse.

yesterday

B: Peach activia

L: 3 chicken sewers and some salad leaves with a small amount of coleslaw

afternoon snack: a choc chip muffin.. Oops
snack before dinner as unfortunately was a late one: pack of walkers!

D: chicken breast stuffed with philly and basil and wrapped in bacon with a small portion of goats cheese also wrapped in bacon and accompanied with salad.

I have prepared todays dinner in advance, I have made a soy, lime and small amount of honey marinade and assembled some chicken and onion and mushroom skewers.

I have some salami in my bag for lunch today and a yogurt so maybe I will pick up some ham or chicken also for snacking if i feel the need. I honestly found this so easy the first time around and I am now having to break myself in slowly before even approaching the attack phase, I dont remember it being so difficult? I want it just as much so surely I should be just as commited??

Epic Fail

Well , I did not pig out on scottish food, and I made a huge stack of scotch pancakes, however they did not make it to the table.
I had veg stirfry with noodles for dinner on wednesday after having not eaten much due to the tummy bug all week, this was not a wise move. Ended up having another day off work and visiting the doctors. Hopefully I will feel better for monday and in the mood for dieting, its hard when you feel this grotty.
Today I weighed 72.4kg, I have eaten 1 small scotch pancake with jam and butter and 1 packet of super chicken noodle soup. For dinner I have picked at chicken nuggets and pinched pizza and chips from my boyfriend..who is now also going on a diet on monday!!
He has been really good and looked after me, bless him, love that man. x

I AM BACK..

Hello Guys
Suprised to see me back?
Who could of thought one date could lead up to 3 months away from blogging, sorry to readers and sorry to myself in a way.
So I have definately loosend the reigns and put on the usual christmas pudge. This mornings weight was 72.6 KG and something has got to be done!
So any way, my date was fabulous, we had a wonderful christmas together and I have moved out of my parents place. All is good on that front. The pair of us are hoping to get a beach holiday in April so we do both have a few pounds we want to shift.
Dan wants to get on his bicycle and eat whatever, but that has never worked for me, I have to diet and do exersize also.
We are having a noodle stir fry tonight perhaps.. I have been off work sick with a tummy bug the past few days (and still gained weight!!) Tomorrow we have a cooking day at work so there will be lots of tasty carbs, but it is scottish day so alteast there will be lots of meaty options.
I really need some encouragement, and I have never been one to drag other people into my business but although I am with someone who is interested in losing weight I dont want to force a diet onto them and its terribly hard to resist temptation.
Hope everyone elses diet is going well..
